Unseen in the picture, there is a plate under the meat, coming from the fire box, the whole length of the smoker, with an opening on the opposite side from the smoke box (the mesh wood holder side). This allow the heat & smoke to travel from the fire box, under the smoking chamber, enter from the opposite end, and travel over the meat, and out the smoke stack next to the fire box. The whole idea of smoking the meat is bringing that smoke and heat across your meat without flame. That's what you want to bring out your smoke flavor. The smoke box has no direct flame contact with the meat. Please call (***)-501-0399 and ask for Gerald. I would be happy to answer any questions.
